Notes from the Chef
Hello again!! On Thursday,our gourmet burger will be topped with a green chili sauce, provolone, habanero bacon, crispy onions, and a garlic paprika aioli. The bacon wrapped pork roulade on Friday will be stuffed with an apple brie mixture, and served with a natural pork jus and maple mashed root vegetables. The prawns will be marinated in a cilantro lime mix, grilled and served with mofongo, a Puerto Rican dish of twice fried plantains, and topped with a Myers rum glaze. On Saturday, our pizza will be topped with sesame swordfish, crispy tofu, spicy wakame, Asian ginger sauce and mozzarella cheese. And finally, on Sunday the Santa fe Poutine will have tater tots loaded with honey habanero crema, stewed poblanos, and black bean corn salsa.
